Headnote
June makes this when the light starts stretching later into the evening and somebody inevitably says they bought too many peaches. It smells like a dessert that should be eaten outdoors, with spoons passed around and one person volunteering to scrape the corners.
The topping stays crackly even after it cools, which is why it never seems to last until the next day.
Cook's notes
- Very ripe peaches may need an extra teaspoon of cornstarch.
- This is excellent with vanilla ice cream or lightly whipped cream.
Variations
- Add a handful of raspberries to the peaches for a brighter finish.
- Swap half the peaches for nectarines when that is what the market has.
