Method

  1. Combine the black beans, corn, avocado, tomatoes, red onion, and cilantro in a large bowl.
  2. Whisk together the olive oil, red wine vinegar, salt, pepper, and lime juice in a small bowl.
  3. Pour the dressing over the bean mixture and toss gently until everything is evenly coated.
  4. Taste and add a little more lime juice or salt if needed.
  5. Serve right away or chill briefly before serving.
